HONEST RAMEN
More than a slogan, it’s ‘the way of the savoury’
OUR VISION
Honest ramen crafted with ethically farmed ingredients and produce from carefully sourced partners, served in our meticulously home-cooked broths - made with loads of TLC*
ETHICALLY FARMED INGREDIENTS
Happy animals, raised responsibly. Fresh vegetables, grown locally. Portion sizes, crafted mindfully.
METICULOUSLY HOMECOOKED BROTHS
Homecooked from A-Z: whether gently infused, slowly simmered or with the %*@# boiled out of it, we use the best traditional techniques to get maximum flavour out of all our broths.
CAREFULLY SOURCED PARTNERS
The best of local, the best of Japan. Our noodles are produced by industry-leader Sun Noodle, and our miso and shoyu are custom made for our us by trusted Japanese suppliers.
*TENDER LOVING COOKING
It’s honest because we care about our ingredients, about our community, our planet and we are sure as hell passionate about ramen.
our values
HONESTY
Sincerity in all things
We craft no-nonsense honest ramen, just great ingredients, great technique, slow cooking and a lot of TLC.
LIFECYCLE
We are all part of this beautiful planet
What we use to craft our delicious broths is what others don’t use of the animal - the heads, feet, and skin. We recycle these leftovers and make it in to the most umami rich broth. We aim for zero waste at our atelier, and succeed pretty well.
QUALITY
Never compromising on quality
Our commitment to quality guides all our decisions - from where we source our eggs to who installs our kitchens.
HOSPITALITY
It’s all about the people
Human interaction is always a two-way street. Serving a bowl of ramen is not hospitality on its own: sharing a moment with the customer is truly hospitable.
Guy Quirynen was new to Kyoto, and hungry.
He stumbled into a popular ramen shop, and experienced umami flavors unlike anything on the continent. He was hooked.
Armed with Swiss hospitality training and an attention to detail that only comes from working in Michelin-starred kitchens Guy set about bringing Japanese ramen culture to the European capital, opening the first Umamido ramen shop April 18, 2013.
our partnerships
We’re building a community, not a corporation.
Our noodle supplier - Sun Noodle - is owned and operated by the Uki family (formerly of Tochigi, Japan).
Our free-range eggs come from hens hand-reared by La Ferme du Lignon in the Geneva countryside.
We buy local where we can, and from small or family-run businesses as a rule.
